Cherry Puff Pastries

As it's cherry season I though I'd share one easy recipe I love to prepare with them. I used the already rolled puff pastry from the shop and the cherries are bio from my friend's garden. And yes, I ate most of them fresh!



Ingredients

  • 200 gr cherries deseeded

  • 1tsp lemon & orange zest

  • 2 tbsp brown sugar

  • 1 tbsp cold water

  • 1 rolled puff pastry

  • 1 egg whisked

  • 1 tsp brown sugar to sprinkle on top

Method


  1. In a sauce pan, add the deseeded cherries, lemon & orange zest, 2 tbsp sugar and 1 tbsp of cold water

  2. Let it simmer on low heat for 30 minutes, stirring once in a while, until liquid evaporates and there is a thick glaze on the cherries

  3. Remove from heat and let it cool down

  4. Preheat the oven to 180C degrees

  5. Unroll the puff pastry and cut 9cm diameter round shapes, I've got 8 pieces

  6. Remove the remaining pastry as it's easier to work them

  7. Add about 1 tbsp of cooked cherries on mid half of each piece of round pastry

  8. Gently fold the pastry over the cherry mix and seal the edges with a fork

  9. Brush with egg wash an sprinkle brown sugar on top

  10. Bake for 15 minutes at 180C till crisp and gold

  11. Serve hot or cold and enjoy!


Notes

  • Keep the puff pastry dough in the fridge right till before using so it's easier to work with it

  • Recipe works perfectly with sour cherries and can be served with ice cream

  • I keep lemon and orange zest with sugar in a sealed glass jar in the fridge, this way it lasts for several weeks
